
# Classic Risotto alla Milanese
This golden, saffron-infused risotto is a Northern Italian staple.
## Ingredients
- 320g Arborio rice
- 1 small onion, finely chopped
- A pinch of saffron threads
- 1L hot beef or vegetable stock
- 80g grated Parmesan
- Butter and white wine
## Method
1. Sauté the onion in butter until soft
2. Toast the rice, then deglaze with white wine
3. Add stock one ladle at a time, stirring constantly
4. Stir in saffron, then finish with butter and Parmesan
Serve immediately for the creamiest results.
